Ask and You Shall Recieve......

Somebody requested that I post the recipes for my Honey Garlic Stir fry and Chicken Lasagna from my meal plan this week. The Chicken Lasagna is a new recipe that I haven't tried yet, so I am will post it after I give it a try this week, but in the meantime here is the other recipe

Honey Garlic Stir fry

SAUCE
  • 3/4 cup brown sugar, packed
  • 2 tbls. corn starch
  • 3/4 cup water
  • 3 tbls. soya sauce
  • 1 tbls. honey
  • 2 cloves of garlic, crushed or 2 tbls. garlic powder
Directions
  1. Combine sugar with corn starch, and garlic powder if using it.
  2. Add water, soya sauce, honey and fresh garlic, if using fresh.
  3. Bring to a boil stirring constantly, and allow to thicken.



  4. Prepare sauce according to directions, and set aside
    Cook stir fry vegetables ( I use a frozen mix but you can use fresh) in a wok ( or large frying pan) until done for your taste
    Pour sauce over the vegetables and let simmer for a few minutes
    Serve on a bed of white rice

    Enjoy!

I must admit that I have been painfully slack with posting my meal plans lately, but I'm making up for lost time today! So here is my meal plan for this week.......

Sunday- Baked Chicken with mashed potatoes, gravy, cornbread dressing and buns

Monday- Chicken Noodle Soup

Tuesday- Honey Garlic Stirfry and rice

Wednesday- Nachos

Thursday- Chicken Lasagna

Friday- Cabbage Rolls and Perogies

Saturday- Pizza Loaf

As you might remember from my earlier posts about budgeting, I have $92.31 in my food jar for the week, but I only spent $44.95

Not To Toot My Own Horn But........

I have been attending an exercise class twice and week and going lane swimming once a week for two weeks now and I have already lost 8 pounds. I know that's not a colossal number, but it's a number that I am both comfortable with and proud of. And I am proud to say that I am now 11 days coca-cola free!

Just thought that you guys should know..........

Happy Birthday To Me!

25 years ago today, I was born, that's right today is my birthday! I love my birthday, even if I do nothing for it, I just love being special for a day. My hubby does such a good job of making me feel great on my birthdays. As I type this he is doing my dishes, then he is going to watch the baby while I go out for dinner with girlfriends. I am so excited for a girls night!

So because it's my birthday, and I am in such a good mood I want to share one of my most favorite things in the world with you......


Sex In A Pan


1/2 Cup margarine
1 Cup flour
2 Tbsp sugar
8 oz cream cheese, softened
1 Cup icing sugar
1 Cup whipping cream
1 (4 serving size) pkg instant chocolate pudding
1 1/2 Cups milk
1 pkg (4 serving size) pkg instant vanilla pudding
1 1/2 Cups milk

To make crust, melt margarine and add flour and sugar. Press into a 9X13 inch pan. Bake at 350 degrees F for about 5 minutes. Cool. Blend cream cheese and icing sugar. Spread over cooled base. Whip the whipping cream until still. Spread 1/2 over cream cheese layer. Beat chocolate pudding with 1 1/2 cups milk for 2 minutes. Pour over whipped cream layer. Beat vanilla pudding with 1 1/2 cups milk for 2 minutes. Pour over chocolate pudding layer. Top with remaining whipped cream. Chill overnight.

*TIPS*
-I use Dream whip instead of whipping cream, it's just too rich otherwise.
-Pop the pan into the freezer in between preparing each of the layers. It's easier to add a new layer when the layer below it is a little firmer.
-Use substitute Oreo crumbs for the flour to make a Oreo base.

Sticking My Head In The Sand

I have been so busy lately, and when I get home I have no desire to do any housework. The result is chaos... sink overflowing with dishes, laundry piling up, and clutter everywhere. So I today I did what any normal person would do....I hid in my craft room. I ended up making a ribbon organizer. I used materials that I already had on hand and it was ridiculously easy. Here are the instructions.....

Ribbon Organizer

Materials:
Cardboard box (I used an old shoebox)
Wooden Dowels
Paper
Hot glue gun

1) Cut the flaps off the box
2) Cover in paper. I used old paper from scrapbooking, but you could use anything like wrapping paper etc....
3) Measure out where you want your dowels and punch the holes for the dowels
4) Run dowels through the holes
5) Put your ribbon on the dowels

Easy peasy!

No Rest for the Wicked

First of all I want to say welcome to all my new followers! I hope you will enjoy reading my blog as much as I enjoy writing it.

I realized today that I have been guilty of not posting quality stuff, mostly just my own bitching about my life. So today I will make amends by posting a recipe! I love this recipe because it uses only pantry items that I always have on hand. No need to plan ahead and buy special ingredients!

Breadmaker Cinnamon Rolls

1 1/2 Cups warm water
4 Tbsp sugar
4 Tbsp oil
1/2 tsp salt
1 Egg
4 Cups of flour
1 Tbsp quick rise yeast (I am a big fan of Fermipan)

Softened Margarine
Cinnamon
Brown Sugar

Put all ingredients in breadmaker in order listed. When you get to the yeast, put it in a well in the flour. Set breadmaker to dough setting. Roll out dough and spread a thin layer or margarine (or butter, whatever floats your boat) on top. Cover the margarine with a good layer of brown sugar, then sprinkle with cinnamon. Roll like a jelly roll and slice. Place slices in a greased 9X13 pan. Let rise for 1 hour then bake in a 350 degree F oven until done.

Breaking The Cycle

In light of my wild 1 day long fitness binge, I have decided to give up my number one, most loved bad thing in the whole world. I have decided to break my addiction to coke. No, not that kind of coke....I can't afford that ;) Just regular Coca-Cola. I love coke, I love everything about it. I love how it makes that sound when you take off the cap. I love how it's soooo fizzy on your tongue. I love how it tastes. Hell, I even love how it looks! But what I love the most is a cold coke on a hot day. Now, I am pretty sure that love like that should be reserved for ones children or spouse. And combine that with the fact that I could easily consume 5-6 coke in a day. Obviously it's time to break the habit!

Today is day 5 of my coke free life. Agony is the only way I can describe it. I find myself dreaming of a tall, cold coke. Seriously, I had an easier time quitting smoking. Yesterday I went grocery shopping and on my way to get salsa I had to go down the pop aisle. My pulse actually quickened when I saw that red box. I was so tempted to buy just one last case, but I am proud to say that I resisted temptation and walked right on past. Hopefully it will get easier as time passes.

Let's Get Physical

Today I did the unthinkable.......I exercised GASP! Yes I, the Queen of all couch potatoes, actually exercised. Today was the first day of my daughters swimming lessons so after her class, off she went to the daycare at the civic center. I then lost my lane swimming virginity. While swimming said laps, I made a few observations about lane swimming that I thought that I would share.....
1) At 11:00 am, the only people who lane swim are over the age of 60
2) There is a very strict set of rules governing lane swimming
3) The as formentioned seniors are effin good swimmers!

Yes, you read that last one right. I have never been lapped so many times by such old women. So really, my attempt at getting fit backfired. Nothing drops your self esteem lower than getting double lapped by a 70 year old woman who just had a double knee replacement. FML
